Quick-Cured Pork Loin Ingredients

3 pound natural boneless pork loin roast* 3 cloves garlic minced
1/4 cup vegetable oil 2 tablespoons coarse salt

Instructions for Quick-Cured Pork Loin

Place roast in large (2-gallon) self-sealing bag. Add oil, garlic and salt, and rub over pork, coating roast well. Seal bag and refrigerate 2-24 hours. Remove pork from marinade (discard any remaining marinade) and place on grill. Lower grill hood and grill for 1 to 1 1/4 hours, until internal temperature is 155 degrees F. Remove to serving platter and let stand 10 minutes. Serve sliced with Mustard-Dill Sauce (in the condiment category).
