Sunshine Lemon Coolers Ingredients

1/2 cup powdered sugar 1 1/2 cups cake flour
1/3 cup sugar 1 1/2 teaspoons baking powder
1/3 cup shortening 1 tablespoon water
1 egg 1 cup powdered sugar
1/2 teaspoon vanilla 1/2 teaspoon Unsweetened lemonade mix
1/8 teaspoon salt

Instructions for Sunshine Lemon Coolers

1. Preheat oven to 325 degrees.
2. Cream together sugars, shortening, egg, vanilla, and salt in
a large bowl.
3. Add the flour and baking powder. Add 1 tablespoon of water and
continue mixing until dough forms a ball.
4. Roll dough into 3/4-inch balls and flatten slightly onto a
lightly greased cookie sheet. Bake for 15 to 18 minutes or until
cookies are light brown.
5. As cookies bake, combine 1 cup powdered sugar with the lemonade
drink mix in a large plastic bag and shake thoroughly to mix.
6. When the cookies are removed from the oven and while they are
hot, add 4 or 5 at a time to the bag and shake it until the cookies
are well coated. Repeat with the remaining cookies.

I added 1/8 tsp of lemon extract to make the cookies more lemony, and I upped the lemon powder to 3-4 tbsp since I like tangy stuff. I may omit the vanilla extract next time since I don't think it adds much to this recipe. The cookies came out really good, now I know how to satisfy my lemon craving. Next I will try making a lime version. You can find lemon and lime powder online, I got mine on ebay.

For anyone who has made this recipe, do these really measure up to the classic lemon coolers we used to be able to buy? (In the green box; don't remember if the brand was Sunshine or not). We've looked everywhere and they are not sold anywhere.

This is excellent!!!! I have been searching for SO LONG to try and find a knockoff recipe for the Girl Scout Lemon Coolers!!!!! I fell in love with them two years ago, and then I was SO disappointed when I found out they were discontinued!! But then I found this recipe, and I would wholeheartedly recommend it to anyone who loved those cookies! I did add about a quarter teaspoon of lemonade mix to the actual cookie dough, to give the whole thing a zesty lemon taste, and I used regular flour because I didn't have any cake flour, and it turned out fine! Also, I cut the cookies in half so they would look more like the Girl Scout Lemon Coolers :) I LOVE THEM and I will definitely be making them again!!

GREAT!!!! I loved these as a kid and was very upset to hear they were not made anymore! I am soooooo happy I found this recipe they taste just like I remember! These are fantastic!

This is absolutely wonderful. My daughter who is now 19 had been begging me to get her some of these cookies and was so disappointed that they were no longer marketed. She ate these all the time when she was little. I tried this recipe and we were ALL so pleased with the results!!

I like lemon so I ended up using more lemonade mix and I also used lemon juice in place of the water
