No-soak Black Bean Soup

No presoaking or parboiling beans needed if you're doing this with a crockpot. Just a no-fuss pot of soup that's ready at the end of the day.

Preparation

Spray the inside of your crockpot with a cooking spray. Add the onion and pepper. Using a garlic press, add crushed garlic cloves directly into the pot. Add rinsed black beans, water, broth, chiles, cumin, thyme, salt, pepper, and bay leaves. Cover and cook on high for at least 8 hours.

I ended up throwing in some leftover shredded chicken at the last minute, just in case the kids didn't dig the beans (which they did). I served it with a dollop of sour cream, extra hot sauce and crusty bread. Oh yea!!!
