Tequila-Lime Shrimp Ingredients
1/2 Stick
margarine
1 1/2 tb
Lime juice
2 tb
Olive oil
1/2 ts
Salt
2
Garlic
cloves, minced
1/2 ts
Chili powder
1 1/2 lb Medium
shrimp
, shelled and
4 tb Coarsely chopped fresh
3 tb
Tequila
Instructions for Tequila-Lime Shrimp
Pat shrimp dry with paper towels. Heat margarine and oil in a large skillet over a medium heat. Add garlic and shrimp; cook about 2 minutes, stirring occasionally. Stir in tequila, lime juice, salt, and chili powder. Cook 2 minutes more or until most of the liquid is evaporated and shrimp is pink and glazed. Add cilantro. Serve over hot, cooked rice, garnished with lime wedges.
