"Made them this morning for my nine grandkids that are all under age 10. Of course had to triple batch for that many kids. You know when they eat every bite it's a good recipe. They absolutely loved them and I had none leftover. I did add 1 tsp vanilla n 1 tsp cinnamon per batch ie 3 tsp of each if tripling recipe. I am planning on mixing enough dry ingredients for a triple batch and storing mix then just adding the eggs, vanilla, and milk when I am ready to make them to save time. 1/4 c Cooking oil
Nonstick spray
1 1/4 c All-purpose flour
1 ts Baking powder; heaping
1 Egg
1/4 c Granulated sugar
1 ts Baking soda
Milk; as needed to make a batter (a cup or two; add gradually)

Preparation

Preheat a skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray. In a blender or with a mixer, combine all of the remaining ingredients until smooth.

Pour the batter by spoonfuls into the hot pan, forming 5-inch circles. When the edges appear to harden, flip the pancakes. They should be light brown. Cook on the other side for same amount of time, until light brown.

I'm so confused at some of these reviews. The recipe clearly states to 'add milk as needed' in the very last ingredient on the list. I can only imagine how revolting they'd be w/o liquid but don't blame the recipe for the cooks mistake. SMH. These are quite nice and fluffy. I add a touch of vanilla, pinch of salt and more sugar. I divide the liquid between lowfat and buttermilk.

I added a tsp of vanilla and a pinch of salt. The pancakes turned out nice and fluffy. Only needed one cup of milk.

After reading the reviews while cooking I was really worried that they would be bad. But my pancakes came out fluffy and delicious! I'm planning to save this recipe and make them for my family sometime!
