Suggest a better description1 Cook the potatoes in boiling salted water, drain and return to the pan on a low heat. Mash to a puree. Heat the butter in a frying pan, add the bacon, garlic and chives, and cook with the bacon till crisp. 2 Add the olive oil and goats cheese to the pureed potatoes and, using a wooden spoon, beat until light and fluffy.
