Original recipe makes 1
1 lbLarge shrimp; peeled
1 cEvaporated skim milk
1 Onion; finely diced
1 tbCurry powder
4 tbButter
1/2 cLight coconut milk
1/4 cFlour
1 tsSugar
1 cChicken Stock
2 cSnow peas
scallions; Chopped
2 tbolive oil
1 tsFresh ginger; minced

Shrimp Curry with Coconut Milk Preparation

Directions: Heat the olive oil in a large skillet and add the onion and curry powder. saute until onion is tender. Add the shrimp, sugar and ginger. Cook 3-4 minutes until shrimp are cooked through. Season with salt and pepper and set aside. In a separate pan, melt the butter. Stir in the flour and whisk to combine. Slowly add the evaporated milk, chicken stock and coconut milk. Stir constantly until mixture is thick and smooth. Finally, return the shrimp to the sauce, along with the snow peas. Cook for 2 minutes to cook through. Serve with steamed rice and garnish with chopped scallions.

    This is great even without the fresh Ginger or evaporated milk - I just went with coconut milk only

    It was alright, but very bland. All my spices were fresh and I used the exact amount. Not spicy at all. Although my family ate it they did ask me not to make it again.

    Why make a curry with rous? This was horrible! I prefer to have my curry thickened by dehydration. The flavor from the butter/flour did not add to the palate, and when it cooled, it looked like cold gravy. I'm afraid of the leftovers!

    Lovely! Mum loved it too as total coconut fan! Though didn't think quantities as stated made it taste coconutty and spicy enough so added more creamed coconut and curry powder. Definately will make again...though sure it isn't so good for the waist line!

    A very rich and delectable way to cook shrimp, I couldn't find any coconut milk so I used coconut cream instead which tasted great!
