This is a recipe using the bags of 15 Bean Soup. The recipe was given to our family by friends and it became our New Years Day Soup since it contained black eyed peas (which of course MUST be eaten on New Years Day for good luck!). Besides, what is better than the soup and good corn bread while watching the bowl games!
Remove the spice packets and save. Inspect and rinse 2 bags of beans, soak overnight in 4 quarts (or enough to cover) water.
Drain the beans and add 4 quarts of fresh water and the ham hocks to the beans. Bring to boil and simmer for 2 to 3 hours covered.
Add rest of ingredients except for spice packets. Simmer 1/2 to 1 hour more.
Remove the ham hocks and take off the meat. Return the meat (and any extra ham) to the pot along with the spice packets. Simmer 1/2 to 1 hour more, uncovered if the soup needs to thicken.
Do not use Cajun Bean Soup, don't forget to add the spice packets or the lemon juice. Corn Bread is a must!
Serve with corn bread
