2 tsBaking Powder
1 cSkim milk
7 1/3 tbSugar
1/4 tsSalt
1 tbFresh Lemon Juice
1 3/4 cAll-purpose flour
1 tbLemon Rind; grated
3 tbVegetable oil
Vegetable cooking spray
5 tsPoppy seeds
1 Egg; lightly beaten

Lemon-Poppy Seed Muffins Preparation

Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine milk and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moistened. Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 deg for 25 minutes or until golden. Remove from pans immediately; let cool on a wire rack. Yield: 1 dozen (serving size: 1 muffin). Didn't work out. They were quite dense and not enough lemon flavour
