Grandmothers Favorite !
About 9 years ago my aunt got everyone in our family to get together their favorite recipes and she had them published in a family cookbook. It also contains a brief family history and tree. We enjoy it so much and we all know they are great, mostly Italian recipes. Here is one from my grandmother.
Peel and cut eggplant into small pieces and boil until tender. Drain and set aside. Fry onion, celery, and garlic until tender. Add ground chuck and brown. Add eggplant then mix. Blend in a small amount of bread crumbs. Add salt, black pepper and red pepper and mix. Place mixture into a casserole dish and sprinkle lightly with bread crumbs and garlic powder. Cover with aluminum foil and bake for 1 hour at 350. Remove foil and add more bread crumbs and parmesan cheese to top. Bake until top is browned. Let cool slightly before serving.
