Ingredients

3 lbs Zucchini; cut into 1" rounds
2 medium Red or Yellow Peppers; cut into 1" squares
1 medium Red onion; cut into 1/2" wedges
2 tablespoon olive oil
2 teaspoon Salt; coarse

Preparation

1 Preheat oven to 475 degrees.

2 Combine vegetables in rimmed roasting pan toss with olive oil, salt, and pepper.

3 Roast until vegetable are tender and browned in spots, approximately 30-45 minutes.
