Chicken Chow Mein

Original recipe makes 2
3 Chicken thigh or breast fillets; skinless and cubed or in 1 inch lengths
1 mediumOnion; quartered
2 clovesGarlic; diced finely
1 mediumCarrot; sliced thinly
7 smallBroccoli Florets
7 smallCauliflower florets
1 stemCelery; sliced
1/4 mediumGreen or red bell pepper ( capsicium ); seeded and cubed
1 1/2 tablespoonLight soy sauce
1 cupWater
1 tablespoonCornflour
2 packets2 minute chicken noodles
2 teaspoonVegetable oil

Chicken Chow Mein Preparation

Put a saucepan of water on to boil.

Mix 1 cup of water slowly to the cornflour until all mixed in and no lumps. (Set aside).

Heat oil on medium high in wok or large deep frypan, when hot add chicken and stirfry for 4 minutes, when turned white add garlic, onion and carrot and stirfry 2 minutes, add celery, cauliflower, broccoli and bellpepper(capsicium) stirfry another 2 minutes.

Put noodles in saucepan to cook.

Stir cornfour mixture then add along with the soy sauce to the chicken and vegetables, stirfry until thickened.

Place noodles on plates and top with stirfry.

You can also make this with pork, beef or prawns.

You can leave out meat and add extra veggies such as bean sprouts, bamboo shoots, baby corn or bok choy.

You can also serve this with rice noodles or rice.

Notes

Important to have everything pre-prepared and close at hand and a saucepan of water heating on the stove for the noodles.

Awesome...real chinese food indeed.INstead of cornflour I used cornstarch.I used pork (didn't have chicken) marinated the pork though in cornstarch,rice vinegar and oyster sauce for 15 minustes than followed the recipe. Great platter ,I needed a bigger stir fry!

Ingredients don't match the steps. Noodles in the steps but not the ingredients. Mein means noodles so should be in the recipe. Right?
