This my family's favorite breakfast. My adult children still ask me to make this. Everyone who has ever tried this just loves it.

| 8 slicesbacon cooked; as crisp as you like |
| 4 cupshashbrown potatoes; freshly shredded or frozen |
| 0.5 onion; finely chopped |
| 1 tSalt |
| 0.5 tBlack pepper |
| 0.25 tcayenne pepper |
| 0.25 tgarlic powder |
| 2 tablespoonButter |
| 4 Eggs; beaten |
| 1 cupsharp cheddar cheese |
| 2 green onions; chopped (optional) |
| dollopssour cream; (optional) |
gobbledygook Preparation
In skillet fry bacon to desired crispness remove from pan drain on paper towel and crumble.
Add potatoes and onion to bacon drippings in pan. Sprinkle with seasonings, fry to desired crispness. Remove from pan and drain on paper towel. Wipe pan down
Melt butter in pan. Return potatoes to pan. Pour beaten eggs over potatoes stir and cook until egg almost set.
Top potatoes with crumbled bacon. Sprinkle cheese over bacon. Leave in pan until cheese melts.
Top with chopped green onions and sour cream if desired
