This is a very quick yeast bread. It's good with meals where French or Italian bread would be good, but you can make it really quickly.
Mix 1 c flour with the yeast, sugar, salt. Pour in the hot water and beat 100 strokes. Stir in remaining flour till dough is no longer sticky. Knead 6-8 mins. Place in greased bowl, cover, let rise 15 mins, punch down, shaping into the shape you want, round or oblong. Place on a baking sheet (sprinkled with corn meal, optional). If you shaped into a round loaf, cut an X, deep on the top with a sharp knife. If an oblong loaf, cut three or four diagonal cuts in the top (this lets the loaf expand when it bakes).

Brush with water, sprinkle with seeds if you're using seeds. Place in middle shelf of a COLD oven. Place a cake pan of hot water on lowest shelf. Heat oven to 400 and bake 40-50 mins until deep golden brown.
