You will enjoy this easy variation to a quesadilla. You may add whatever you want to this, my family likes it this way. But spice it up if you dare.
Dice onions and start to saute in olive oil, dice jalapeno and garlic and set aside. When onions start to brown add ground beef and brown the beef,(be sure you drain the fat before you add the rest of the ingredients) add jalapenos and garlic. Then add cumin, cilantro, salt and pepper stir to blend. Pour in the soy sauce and simmer. On a large griddle using medium heat or slightly higher, pour a small amount of olive oil and place the tortillas and spin it to coat the tortillas, sprinkle cheese evenly onto the tortillas, once the cheese starts to melt and the tortillas start to brown, spread the meat mixture onto half of the tortillas and fold over. Remove onto a flat plate, let rest for a few minutes and cut into wedges.
You may spice this up as you wish, a dash of hot sauce always helps. It will be plenty for 2 people as a main meal and great for 4 as an appetizer. You can also replace the ground beef with chicken, flat iron steak or skirt steak.
