This Vietnamese dish uses sweet brown sugar to temper salty fish sauce. Consistent heat throughout with no flair-ups.
In a small bowl, combine the sugar, fish sauce, water, rice vinegar, garlic, ginger, pepper and chiles.
2. Heat the oil in a large deep skillet. Add the sausage and cook over moderate heat until browned on both sides.
Add the shallot and cook until softened. Add the fish sauce mixture and the chicken and simmer over high heat for 5 minutes. Add the beans and peppers and cook for 5 more minutes, until the chicken is cooked through. Transfer to a serving bowl, garnish with the cilantro and sesame seeds.
