| 1 tspbaking soda |
| 6 tbspbutter |
| 1 cupraisins |
| 1/4 tspsalt |
| 2 Eggs |
| 1 cupsbuttermilk |
| 1 tspCream of tartar |
Ruth Daniel's Irish Soda Bread Preparation
In a large bowl,
Mix dry ingredients, reserving raisins. Add butter, mix with two knives or your hands till a fine “meal” is formed. Add raisins.
In a second bowl,
Beat eggs; reserve 1 Tbsp for top of loaf. Stir buttermilk into eggs.
In the first bowl,
Slowly add liquid mixture to the dough and stir until moistened throughout.
On a well floured surface knead dough with hands about 12 times. Shape into a ball and place into a well greased casserole dish. (Can also be baked on a cookie sheet).
Cut a large cross 1 inch deep across the top of the loaf. Brush with remaining egg.
Bake at 350 for 1 hour and 15 minutes.
