This is a great way to add some flavor to brown rice and enjoy as a side dish. You can also add additional vegetables or chicken to make a main dish. This is a low fat, healthy dish.
Boil water then add chicken bouillon, soy sauce, ginger and garlic and let sit.
Saute carrots and onion in olive oil until tender.
Add broth to carrots and onion and bring to a boil. Let boil about 3 minutes
Add rice, cover and simmer for 5 minutes
Remove from heat and let stand for 5 minutes before serving.
1 serving = 1/2 cup
