I have eaten these for years and love it. If you mix the potatoes, eggs and cheese together with some salt and pepper and any other spices and let it sit for an hour before eating, the flavors will blend more and they taste mo'betta....LOL! Enjoy.....
Chop up the potatoes, onion, pepper and place in a pan large enough to boil it all in covered with water. Cook until it is done, not mushy either. Drain potato mixture and set aside. While the potatoes are cooking you can scramble the eggs with a teaspoon of water and salt to taste in a non-stick fry pan, using a plastic untensil. In another pan, fry the sausage links for at least 7 minutes on each side to make sure they are completely cooked. Put on a paper towel to drain. Now that all your items are cooked you can assemble the breakfast burritos. One large one for each person. Heat the tortilla by putting in a non-stick pan for minute on each side on medium to low heat. This way they do not break when you fold it. Put your potatoes in first, some cheese (so it melts) a layer of sausage, eggs and another layer of cheese. Wrap it up, by folding the bottom part up, then the sides, get a napkin. eat and enjoy.
