|1 1/2 poundsJumbo Shrimp; (Peeled and Cleaned)|
|2 tablespoonsExtra Virgin Olive Oil|
|3 clovesgarlic; (Minced)|
|1 cupYellow Onion; (Chopped)|
|1 cupGreen or Red Peppers; (Chopped)|
|2 largeTomatoes; (Chopped)|
|1/4 Dry White Cooking Wine|
|1 1/2 teaspoonsCumin|
|1/4 teaspoonCayenne Pepper or Paprika|
|2 tablespoonsTomato Paste|
|1/2 teaspoonSalt and Black Pepper|
|1 tablespoonCilantro; (Minced)|
Enchilado De Camarones (Shrimp Creole) Preparation
In a large pan add EVOO and butter on Low/Med heat until it begins to foam over. Add onion and pepper and saute until translucent.
Add Garlic and tomato saute for 2 minutes.
Add tomato paste, water, wine, Cayenne Pepper, cumin, and salt and pepper mix well.
Cover and raise the heat to Medium simmer for 5-7 minutes.
Add shrimp cover and simmer for another 10-15 minutes.
Serve Over White rice.
