This Shrimp dish has been passed around my family for years and its still the dish my grandmother makes for special occasions.

| 2 tablespoonsExtra Virgin Olive Oil |
| 2 tablespoonsButter |
| 3 clovesgarlic; (Minced) |
| 1 cupYellow Onion; (Chopped) |
| 1 cupGreen or Red Peppers; (Chopped) |
| 2 largeTomatoes; (Chopped) |
| 1/4 cupWater |
| 1/4 Dry White Cooking Wine |
| 1 1/2 teaspoonsCumin |
| 1/4 teaspoonCayenne Pepper or Paprika |
| 2 tablespoonsTomato Paste |
| 1/2 teaspoonSalt and Black Pepper |
| 1 tablespoonCilantro; (Minced) |
Enchilado De Camarones (Shrimp Creole) Preparation
In a large pan add EVOO and butter on Low/Med heat until it begins to foam over. Add onion and pepper and saute until translucent.
Add Garlic and tomato saute for 2 minutes.
Add tomato paste, water, wine, Cayenne Pepper, cumin, and salt and pepper mix well.
Cover and raise the heat to Medium simmer for 5-7 minutes.
Add shrimp cover and simmer for another 10-15 minutes.
Serve Over White rice.
