Delicious light summer salad

Put prepared vegetables in large salad bowl. In smaller bowl combine remaining ingredients with whisk until salt and sugar dissolve. Pour dressing over vegetables and let stand in refrigerator about 1 hour before serving for best flavor.
I didn't have oregano so I used basil instead, also added fresh dill.

etranterbrown 4 months agoTried this today with on hand ingredients. Substituted black cherry infused balsamic vinegar, added a tinge of lemon, 1/2 of the olive oil & left over feta. OMG! So good!!!!!

champs1961 8 months agoI modified it a bit I used the following ingredients: cherry tomatoes no seed cucumber Balsamic vinegar and honey instead of sugar and less oil it was delicious.

BlueJayPie 9 months agoDelicious! This made a refreshing side dish on a summer evening. I used red onion instead of Vidalia and used less than called for. Next time I'll try the Vidalia.
jokoboco 9 months agoI used less oil but my husband liked it and he does not love veggies. He even had more the next day! I thought it to be a great summer dish!
