Delicious leeks with an addition of smoky bacon! This dish is unbelievable.
Based on Jamie Oliver's recipe.
1) In a large frying pan, heat up the olive oil and melt the butter. Add the garlic and cook for 2 minutes. Add the leeks and cook for about 5 minutes. Add the wine and cook until 1/3 has evaporated, about 5 minutes on medium high heat. Add the chicken stock and cook for another 5 minutes. Place bacon slices on top of the leeks, making sure to cover the edges, and cover with a tight fitting lid. Cook on low heat for 30-45 minutes or until the most of the liquid has evaporated.
2) Cook the pasta "al dente" (boil for 7-10 minutes) or until the pasta is almost soft. The pasta should not be too soft. Drain and set aside.
3) Crush the croutons in a food processor.
4) Drain the leeks (if any liquid remains) and chop the bacon slices. Combine the pasta, the leeks, and croutons and mix well. Grate about a 1/4 cup of cheese per plate. Top off with dried oregano.
