This is the name my dad gives to this mum's dish... He always say that potatoes are pretending to be another thing. ;)
Peel the potatoes, wash them and cut into a 1/4 inch slices. Salt and let them drain.Toss in the flour, pass on the beaten eggs and fry in medium heat olive oil, set aside.
Fry the onion and one garlic sliced on medium heat whith 2 tbsp olive oil, when became transparent add the dry chlli pepper and half of the saffron, wait 20 seconds and mix on a mini food processor with the raw garlic, the thyme, the rest of the saffron and the parsley.
In a big wook put a layer of sliced fry potatoes. Put a little bit of that mix on the top of each slice, spread with diced almonds and cover with one or two bay leaves and do it again til potatoes are finished. Cover with boiling water, salt and pepper, let simmer cover on a very low heat, untouch, for 30 minutes to 40. Add boiling water if it needs, but not enough to totally cover the potatoes.
