Sun-dried tomatoes, basil and low-fat cottage cheese meld to bring this low fat tasty dip. Serve this with low-fat crackers, carrot sticks, sweet peppers, broccoli florets or other vegetables.
In a small bowl, combine the tomatoes and water. Let stand for 5 minutes to soften the tomatoes. Drain well and chop finely.
Place the cottage cheese in a food processor. Add the tomatoes, green onions, basil, lemon juice and pepper. Process with the pulse button until mixed and somewhat smooth.
Per 2 tablespoons: 32 calories, .3 g of fat, .3 g dietary fiber, 1 mg cholesterol, 119 mg sodium.
