Slow cooking makes this chicken so yummy you will forget about the bacon fat.
Put oil and fat in a large skillet. Set for medium-high heat. In a gallon size zip top bag, put the biscuit mix, celery salt, savory salt, kosher salt, black pepper and mix with the top closed. Add chicken to bag and mix until thoroughly coated. Add chicken to 375 degree oil, cooking in batches if necessary not to crowd the pan 3 minutes per side. Season with oregano leaves and paprika while frying. Once all chicken has been browned on both sides, add all chicken back to the skillet and set to low. Cook on low for 90 minutes, adding water if necessary.
