Delicious, light yet satisfying meal or side. This is my recreation of the rice and beans we were served daily when in Costa Rica.
In large frying pan heat oil and saute onion, garlic, bell pepper, cilantro and bay leaf until onion is transparent.
Add rice and beans and heat well.
Serve with eggs, fried or scrambled, tortillas, sour cream and salsa. Make a complete meal by adding fresh pineapple, mango, watermelon, etc.
