Instructions
Food process walnuts & pecans (coarsely ground) and mix with sugar, allspice, vanilla and cinnamon in a bowl. Use a lasagna pan or large glass pyrex (around 10 x13). It may help to cut all the phyllo to the size of your pan while it's laying flat on the counter. Brush/spray pan with butter. Begin laying down one single layer of phyllo dough in the pan at a time. Brush each layer of phyllo dough with butter with a VERY soft pastry brush or oil pump sprayer*. Repeat putting in single layers brushed/sprayed with butter until about 6 to 8 layers are down. Layer with 1 cup of the walnut mixture (a total of 4 walnut layers). Continue with 6 to 8 buttered layers then walnuts until walnut mixture is gone. Finish with 6 to 8 layers of buttered phyllo.
Cut halfway through the depth of the phyllo into 24 triangles - 3 by 4 rectangles then slice rectangles diagonally. Don’t hit the bottom of the pan with the knife and you may need to gently hold the phyllo in place so the knife doesn't drag it. Bake at 300° F for anywhere between 1 hour to 1 hour and 25 minutes until the top is light brown. Remove from oven.
Pour honey onto hot baklava allowing it to run into the slice cuts and sides. You can heat the honey if you need to for easier pouring.
Once cool, finish cutting all the way through.
REMEMBER: Don’t sweat the small stuff. The phyllo will never lay perfect and the cuts are never perfect. Do not smash or squoosh down - air pockets (unperfect) make a lighter, flakier baklava.
* You can use a metal olive oil mister to spray the butter on. Melt the butter in the microwave and pour it into the mister. Keep the mister in a pan of hot water in between sprays to keep the butter melted. Not only does this speed up the process, it uses nearly a stick less butter (no taste difference) and you don’t tear the phyllo with a brush!
