1/ c drywhole grain brown rice
cooking spray
1/4 lbchicken or turkey cutlets or ground
1/2 csweet potato puree
1/4 cmilk
1egg
1/2brocolli or spinach puree
1 1/2 cwhole wheat cracker crumbs or breadcrumbs

rice balls with turkey Preparation

cook rice, 30-40 minutes

cook chicken, 4-5 mintues per side.

process chicken.

add puree, cheese, salt, milk and process until smooth.

add mixture to rice.

roll into balls.

mix egg and veggie/chicken mixture.

put crumbs into a bowl.

dip into egg/veggie/meat mixture then coat with crumbs evenly.

coat non stick skillet with cooking spray. set to med-high heat.

when hot, and oil, 2 teaspoons.

add rice balls and cook 5-7 minutes turning occasionlay and spraying with cooking spray until browned and crisp all over.
