Mini Frittatas

These individual servings are perfect because they bake so quickly! Also you can tailor the ingredients (add mushrooms, peppers and onions) to some, but not all of the servings based on your family's preferences.

"So yummy!! Made these Christmas morning and everyone gobbled them up! I used a regular 12 cup muffin pan instead, parsely flakes instead of fresh, crumbled sausage and bacon instead of ham, and finely shredded cheddar & monterey jack cheeses instead of parmesan. Wow, they were good! The sausage really kicked up the flavor! The family loved them!"

8 large Eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 oz. thinly sliced ham; chopped
1/3 cup freshly grated parmesan
2 Tablespoons fresh parsley

Original recipe makes 40 Servings



Preheat oven to 375 degrees.

Spray mini muffin tins with nonstick cooking spray.

Whisk eggs, milk, pepper and salt in a large bowl to blend well. Stir in the ham, cheese and parsley.

Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture is just set in the center, about 8-10 minutes. (Cook longer if you like your eggs to set up more).

Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

I made this for my kids' elementary school Veteran's Day celebration. It was quick and easy and tasted great. I tripled the recipe and added spinach, bacon or sausage and cheese. There were no leftovers. Everyone loved it!

So easy and versatile! I made some with halloumi and tomato- yum! Mum thought they looked very impressive and stole one! Would make a great appetiser :)

Was very good! I had no ham or bacon so I made a vegetarian version with spinach, onion and carrots, and topped it with extra cheese (I used jalapeño cheddar instead). Delicious! Was great with jam and toast.

Even making some of them vegetarian and some with ham it was very easy to make. I would make this recipe again.

Made this for my kids' Veteran's Appreciation breakfast. It was super easy to make some with sausage and some with bacon, bell peppers, spinach, etc. I'm sure I'll be making this again.

Super fast, super easy, Very flexible:) Me and my fiance made this for breakfast it was Great:) we used. Small cake pan though and cooked it for 28minutes. We melted cheddar on it and Will be adding A Lot more ingredients next time. Salsa or taco sauce is Great with it too:)

I love this recipe! This time i halved the recipe and used breakfast sausage which I cooked first then pulsed in the food processor. I also added a whole onion (which I pureed in the food processor). I poured it in a pie dish and baked for 25 min. My hubby and mom loved it also and had seconds!
