Really basic Lentil recipe. Use miso for the broth.
Start with olive oil, garlic, onion and carrots. Stirfry for 2-3 minutes over high heat
Add lentils and water
Add kale
Cook for approximately 15 minutes on med heat until lentils are tender
Take a small bowl and with a ladle, scoop out a little broth and place in bowl. Take a tablespoon of miso and dissolve in the broth. Do not boil the miso as you will kill the valuable enzymes in the miso. Next, dish out the amount of soup you want and gently mix the broth and soup together. Add more miso as needed. Miso provide the salt needed unless you prefer more.
Don't boil the miso.
