Spiced up 4 Cheese Lasagna
Easy to make, delicious blend of ricotta, mozza, parmesan and cottage cheeses. leave out the chili powder if you don't want spice.

| 2 canstomato sauce |
| 1 cantomato paste |
| 1 canmushrooms; pieces and stems |
| 1/4 cup of eachfrozen corn/orange peppers; optional |
| 1 tspdried minced garlic |
| 1/2 tsporegano |
| 1/2 tspcrushed red pepper |
| 1 tspcumin |
| 1 tspparsley |
| 2 tspchili powder |
| Cheese Mixture |
| 3/4 + 1/4 cupparmesan; (save 1/4 cup for topping) |
| 1 cupricotta cheese |
| 1 cupcottage cheese |
| 1 1/2 + 1/2 cupsgrated mozzarella; (save 1/2 cup for topping) |
| 1 egg |
| Base |
| 1/2 packagelasagna noodles; (about 12 noodles) |
| 1 poundground beef |
Spiced up 4 Cheese Lasagna Preparation
Meat Sauce:
In a large saucepan, combine tomato sauce, tomato paste, mushrooms and spices, keep simmering on minimum heat. Add onions/peppers/frozen corn if desired.
In a large frying pan, cook ground beef until brown.
Add ground beef to tomato sauce and continue simmering on low heat.
Boil approx 5L of water and add lasagna noodles, boiling for approx 10 min.
Preheat oven to 350 degrees.
While noodles are boiling, begin Cheese mixture:
In large bowl, combine:
3/4 cup parmesan,
1 cup ricotta,
1 cup cottage cheese
1 1/2 cups mozzarella
Beat egg and mix into cheese mixture.
In a small bowl combine:
1/4 cup parmesan
1/2 cup mozzarella
Rinse cooked noodles in strainer under hot water
In a 9X13 baking dish, layer as follows:
1. layer of meat sauce
2. layer of noodles
3.layer of large bowl cheese mixture.
repeat until pan is full or mixture is used up, final layer will be a layer of meat sauce.
once complete, cover lasagna evenly with smaller bowl cheese mixture
cover dish in tinfoil and bake for 45 minutes.
