This is a bit of a different recipe for French Toast using flour as an ingredient but the feedback I get every time I make it for friends and relatives is always glowing!
This recipe makes a lot but you can store leftovers in the fridge or freezer and just pop them in the toaster for a quick weekday breakfast. Serves 4 -8 using 12 -18 slices of bread.
Preheat a griddle to 325°F.
Crack eggs into a large bowl.
Add flour, cinnamon, and nutmeg. Whisk into a smooth paste.
Add brown sugar, milk and vanilla, whisk to combine.
Dip bread slices into batter coating both sides.
Place onto griddle (greased) and cook on each side until golden on each side.
Cool any unused toast on a cooling rack to cool and place in a freezer bag with wax paper between each slice.
The bread is an important aspect to making great French Toast. Our local bakery carries a cinnamon swirl coffee cake that sliced and battered makes absolutely marvelous French Toast. Italian (without seeds) is a good choice. Dare to try something different, it could be great. If you absolutely must use presliced bread at least go for the heartier Texas Toast or maybe even a cinnamon swirl breakfast loaf? A drier bread makes better French Toast.
