This is meant to be a replacement for bacon or sausage in the morning with your breakfast. I like it not only for breakfast but also two of them with pepper jack or swiss between them make a great light lunch as well. Also I'll often combine them with a breakfast quiche of some sort that I have baked in a muffin pans. Just one more way to have a hearty breakfast that require no cooking the day of, just warm in microwave and take out the door with you.
1. Mix ingredients in bowl
2. Shape into 2 oz patties (this should be 8 patties in total)
3. Grill for 5 minutes on double sided electric grill that has been coated with cooking spray or use cooking spray on non stick skillet and cook on each side for about 5 minutes on medium heat.
Make sure that insides are not pink in this meat dish and the more fennel the better in my world. I know some version of this recipe call for pecans or walnuts to be finely chopped and added as well. I don't like nuts so we skip that in my version of this yummy breakfast meat. ...
Make a couple of batches of these at the beginning of the week and you can just grab and go. Or warm them up in the mircowave before heading out the door.
