Original recipe makes 12
2 Eggs
2/3 cBrown Sugar; Packed
2 bananas; ripe
2 tsBaking Powder
1/2 tsGround cinnamon
1 tsVanilla
1 cFresh blueberries
2 1/4 cFlour
1/2 tsSalt
6 tbButter; melted

Banana-Blueberry Muffins Preparation

Preheat oven to 400 degrees. Lightly grease 12 2-1/2 inch muffin cups. Combine flour, baking powder, salt, and cinnamon in a bowl. Beat bananas in a large bowl with an electric mixer until mashed. Add eggs, brown sugar, butter, and vanilla, beating until blended. Stir in combined dry ingredients with a wooden spoon until just blended. Stir in blueberries until just combined. Spoon into prepared muffin cups, dividing batter equally. Sprinkle tops of muffins with granulated sugar and bake 20-22 minutes, until golden brown. Remove muffins from pan and cool on wire rack. You can substitute the 6 Tbsp butter with 1/4 c nonfat yogurt, and these come out fine.     This is a GREAT way to use up bananas! I was concerned they would be too sweet and was tempted to reduce the sugar (I did a bit by not packing it) but they were perfect.
    I did make lots of changes to make them healthier, which a lot of time makes them less tasty, but it all worked wonderfully. below is an outline of the additions/changes
    used 2 tbsp melted butter + 1/4 cup fat free greek vanilla yogurt
    used 1 cup a.p. flour, 1 cup wheat flour, and 1/4 oatmeal
    added to the dry ingredients 2 tbsp each, chopped pecans, flax meal, chia seeds
    used 3 bananas instead of 2 because mine were small
    used 1 heaping cup frozen blueberries

    I made this one day, but this recipe was WAY to dry. Then I tried it another day with a 3/4 cup water. It was awesome! So add 3/4 cup water.
