This bread taste a lot like a pice bread. You can't tell it is zucchini. Very moist great hot with butter.
Combine flour, baking soda, salt baking powder, cinnamon and nuts, set aside. Beat eggs slightly in a mixing bowl, add sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple add dry ingredient stirring only until dry ingredients are moistened. Spread batter into 2 well greased and floured 9x5x3 loaf pans
Bake 350 degrees for 1 hour or until done.
Cool 10 minutes before removing from pans, turn out on rack and cool completely
