Lightly spray 12 hile mini muffin tins with oil
Push wonton wrappers into holes, then lightly spray with oil
Bake for 7 minutes or until lightly browned
Stand in tins for 2 minutes the fore turning out onto a wire rack to cool
Combine chicken, apple, chives, mayo and lemon juice in a medium bowl
Season with salt & pepper
Carefully spoon chicken mix into each cup
Arrange on platter and serve immediately
