A hearty, chunky stew that's perfect for fall and winter!
Rinse and trim beef, pat dry. Mix together flour, onion powder, garlic powder, and pepper in a freezer bag or large bowl. Toss beef in flour mixture to lightly coat it.
Heat olive oil in large pot or Dutch oven until almost smoking. Brown beef cubes in batches and set aside. De-glaze pot with red wine. Dissolve 4 cubes of bouillon in 4 cups of water and add to pot, or add 4 cups of beef stock, whichever you have on hand. Stir in Herbs de Provence, Worcestershire sauce, ketchup, A-1 sauce, mushrooms, and more pepper if desired. Dump beef cubes with all juices into pot, bring to a boil then lower heat and simmer for 40 minutes stirring frequently.
Dissolve 2 remaining bouillon cubes in remaining 2 cups of water and add to pot (or remaining 2 cups of beef stock, if using). Add tomatoes, carrots, and celery. Bring back to a boil, then lower heat and simmer for another 20 minutes.
Add potatoes, onion, and garlic, and simmer until all veggies are tender. If needed, dissolve 2 tbsp. cornstarch in 2 tbsp. water and stir into stew to thicken.
Enjoy with warm, crusty bread or rolls!
*NOTE*
I tend to eyeball spices when cooking, so measurements are approximate. Be creative, this stew is very forgiving! Also, be sure to watch this stew, and stir it frequently...it will stick to the bottom of the pot if heat is too high and it is not stirred often :-)
