Delicious little quiches that I once made it in a cooking class! I usually make double the recipe.
1) Preheat oven to 200 degrees celsius. Lightly spray 2 patty pans with cooking oil
2) Using a round cutter, cut 24 circles from the pastry sheets and put into patty tins
3) Finely chop bacon and spring onions and sprinkle into pastry cases. Divide cheese evenly into pastry cases
4) In a small jug, combine egg, milk and cream, beating well with a fork
5) Pour egg mixture evenly into pastry cases, taking care not to overfill them
6) Bake for approx 12-15min or until golden brown on top
7) Cool on a wire rack
-Make sure you really beat the egg so it's mostly integrated with the milk and cream.
-Be careful when pouring the cream mixture into the shells because it is easy to overflow.
-Make sure the pastry is room temperature before you try and start to cut it, otherwise it will break.
