This is a great summer recipe. It is a pretty and colourful dish that is lovely to take to any pot luck. It makes a wonderful appetizer salad but is also hearty enough for a light lunch. It has been a favorite in our house for decades.
In a large bowl, combine shrimp, beans, onion, tomatoes and pimiento. Combine oil and vinegar and pour over shrimp mixture. Mix well. Refrigerate, mixing occasionally to evenly distribute the dressing.
Cook bacon until crispy. Crumble over salad just before serving.
