Suggest a better descriptionHeat oven to 300° F. Line a rimmed baking sheet with parchment paper.
In a bowl, combine cocoa, salt, and sugar. Whisk egg white in another bowl with vanilla extract until frothy; stir in nuts.
Remove nuts with a slotted spoon and toss them with the cocoa mixture. Coat evenly.
Spread on baking pan in single layer and bake 15 minutes. Stir the nuts and return to oven. Bake for a final 10 minutes.
Remove from oven and let cool. Store in airtight container.
Watch oven closely and don't scorch the cocoa. Use a good quality cocoa and fresh almonds.
