Soak sponge fingers in the spirit and lay in the dish
For the cream mixture - Beat egg yolks & sugar, fold in Mascapone cheese.
Whisk egg whites, fold into the cream mixture
Lay the strawberries in the dish with the sponge fingers
Cover with the cream mixture & chill for at least 30 mins - ideally overnight
Decorate with a fresh strawberry before serving
