"I had a large bag of fresh broccoli cuts and steamed those. We like our soup spicy so used pepper jack cheese. A real hit for my husband when he came home for lunch! Also served with a salad and fresh bread for an evening meal."

1 ts Salt
1/8 ts Nutmeg
1 1/2 tb Butter
1 c white cheddar cheese; Grated
3 tb Onion; finely chopped
2 tb Flour
2 1/2 c milk
1 pn Cayenne pepper; to taste
1 tbsp flour

Recipe by: Freshlike Products Preparation Time: 0:05 Cook broccoli according to pkg directions, but omit salt and add onion. In a large saucepan over medium high heat, melt butter, cook 1 minute. Add the 2 tbsp flour, whisk 1 min. Slowly whisk in milk and salt until smooth and boiling. Add broccoli and grated cheese, continue to whisk. Bring to a boil. Good start. The cayenne helped a bit but didn't taste right for this dish. So...I used whole wheat flour, added shallots, a sprig of fresh rosemary and sage and ended up liking it a lot more. Thanks for the recipe!

I just made this with brocolettes , it was amazing! I used whole wheat flour instead of all purpose because that's what I had in the pantry. It was rich and tasty! Used lots of pepper :)

Yummy! I used frozen chopped broccoli and pepper jack cheese. Made a salad and had whole wheat roll. Just delicious. Thank you.

It was delicious and did not take me that long to make. I used rice brown flour instead of all purpose flour but it still came out great. It can get very thick so I added a little bit more water.

Quick and easy to make. Not overly flavorful, but still it still makes a great light lunch. I like my broccoli soup without big chunks so i put it in the blender after cooking.
