Pork and potatoes
Sear the pork loin steaks in a cast iron skillet. At the same time heat the olive oil, garlic, and rosemary in a pan. Do not allow the garlic to brown. Remove from heat and toss potatoes in mixture. When both sides of the pork are seared put the potatoes in the skillet evenly. Place in a 400(F) degree oven until potatoes are browned. (Approx 20-30 min)
Allow pork to sit with rub until pork comes to room temp.
