Adapted from Deborah Madison's cookbook "Vegetarian Cooking for Everyone", this is a simple way to prepare turnips with delicious results. This is best applied to farm-fresh, young turnips that are still tender and sweet.
1) If turnips are tender and small, peeling is unnecessary. Bring 3 quarts of water to boil for the greens and set steaming basket over salted water for the turnips.
2) Add 1 1/2 tsp salt to the water, then add the greens and simmer until tender, 8-10 minutes. Meanwhile, steam the turnips until tender firm: 10-12 minutes depending on size.
3) Drain the greens and press out any excess moisture, Toss with half the butter and season to taste with freshly ground pepper. Toss the turnips with the remaining butter and season with pepper and thyme. Serve atop the seasoned greens and enjoy!
