1. Preheat oven to 350 degrees F and lightly spray or butter a 9’x13’ pan with cooking spray. In the bottom of pan, put the coconut and nuts. Press down well with a fork.
2. Mix cake mix according to package directions. Gently spread batter over the nuts and coconut but do not stir
3. In a bowl, mix the cream cheese, butter, 1 egg, vanilla, and powdered sugar until fluffy. Spread over the batter without stirring.
4. Bake at 350 degrees F for 45 minutes or until center puffs and internal temperature reaches 165 degrees.
5. When this comes out of the oven, it will crack down the center. This is why it's called an Earthquake Cake. The cream-cheese mixture sinks and the nuts and coconut rise, and it does not look pretty but it tastes delicious!
