Great zucchini bread recipe.
Combine sugar and eggs, add oil and vanilla together, then add zucchini and mix. In another bowl, mix flour, cinnamon and salt. Put a well in the flour mixture, then add the wet ingredients. Stir in nuts ( can substitute raisins), then pour into lightly greased loaf pans (8x2x4). Bake at 350 for 60 minutes or until toothpick comes out dry.
