The apple and cinnamon go together well, without overpowering each other.
Preheat the oven to 175C (350F). Grease a 12-cup muffin tin.
In a medium bowl, combine flour, sugar, baking powder and cinnamon. Set aside.
In a large bowl, beat the oil, butter, eggs and buttermilk with an electric mixer until fully combined. Add the flour mixture and beat until nearly combined. Stir in the apples. Be careful not to overmix. Spoon the mixture into the tins.
Bake for 20 minutes or until golden brown. Remove tin from the oven and allow to cool for 5 minutes. Then remove the muffins and cool on a rack.
