Baked pancake with apples and raisins
From the Gooseberry Patch Fall Favorites with Sun-Maid Raisins & Dried Fruit cookbook
Toss apples, raising, brown sugar, and cinnamon; spoon into greased or buttered 9" pie tin. Bake at 350° for 10-15 minutes. Remove from oven and set aside.
Whisk together eggs, milk, flour, and butter; pour over baked apple and raisin mixture.
Increase oven temperature to 450°'; bake until golden brown, about 15 minutes.
Pancake should puff up, and will fall slightly when removed from oven.
Slice into wedges and serve warm.
*Optional; garnish with powdered sugar
If you use margarine instead of butter, you will likely have clumps, or beads. Whisking thoroughly will help remove them.
