Crust: Mix flour, oats, sugar + salt in food processor til oats are fine. Add butter, one pc at a time, pulsing, til mixed. Add oil + water + pulse just til dough starts to come together. Put on counter with a little flour + kneed til it holds together. Form into a 5” disc + wrap + refrigerate.
Filling: Peel pears + thinly slice. Peel apple + thin slice. Toss fruit with lemon juice in bowl. Put brown sugar, butter, cinnamon + ginger in 10” ovenproof skillet + cook over medium-low, stirring til butter + sugar are melted + mix starts to bubble. Remove from heat and start arranging pear + apple slices in circles overlapping slices and adding layers til all slices are in pan. Scatter cranberries on top. Put pan back on heat and bring liquid to a simmer (listen for bubbling) Cover + cook 5 min. Uncover + cook, swirling pan occasionally, til sauce becomes thick, caramel- like (7-10 mins).
Preheat oven 375
Remove from heat Roll the dough between parchment into 12” circle. Peel off top sheet and invert dough over fruit. Tuck edges of crust down into sides of pan. Prick top w/ fork. Bake pan til crust starts to brown around edges (30-45 min) Let cool for 15 min. Run knife around edge of pan to release crust. Put serving plate larger than pan on top + invert tart on plate. Shake lightly to release if you have to.
