South American chicken with rice. A little spicy. A little sweet. A lot yummy.
Trim excess skin from chicken legs. Marinate in 1 cup of beer and 1/2 cup fresh orange juice. Sprinkle with salt and TJ's Smoke Seasoning Blend (or smoked Paprika.) Turn halfway through marinating and sprinkle with mor salt and Smoke Seasoning.
Sauté chopped onions, carrot, celery, bell pepper, and parsley (or cilantro) in 1 Tbs coconut oil and 1 Tbs butter until onions are translucent and veggies are soft. Stir in canned tomatoes. Add Mexican seasoning, salt, and pepper to taste. Remove from pan and set aside.
Remove chicken from marinade and pat dry. Add 2 Tbs coconut oil and 2 Tbs butter to pan. Heat on Med heat until shimmery. Add chicken to pan and cook until nicely browned on all sides. Remove chicken from pan and set on paper towels to drain. Scrape up browned bits on bottom of pan.
Add rice to oil. Stir until all rice is covered with oil. Sauté until slightly browned. Add 4 oz beer a little at a time and stir to deglaze the remaining browning on bottom of pan. Add vegetable mixture to rice. Stir in 3 cups liquid (1 cup beer, 1 cup chicken broth, and 1 cup coconut milk.)
Place chicken legs on top of rice. Bring mixture to boil. Reduce heat to low. Cover and cook for 20 - 25 minutes. Remove from heat and let sit for 5 minutes. Fluff rice with a fork and serve.
Possible additions: chopped green olives with pimentos. Small bag of frozen peas.
